Efforts to combat food insecurity in Colorado are gaining momentum as the Village Exchange Center (VEC) introduces a new operational strategy. The organization has decided to open its food pantry on two days of the week instead of one, aiming to accommodate the growing number of families seeking assistance more effectively. By distributing the influx of visitors over Wednesday and Thursday, VEC aims to enhance safety and efficiency while maintaining service hours from 11:30 a.m. to 3:30 p.m. each day.

Despite this innovative approach, financial constraints and dwindling resources pose significant challenges for VEC. Program Manager Bhim Bhattarai highlights the necessity of balancing limited budgets with the increasing demand for services. With fewer funds available, the organization relies heavily on community donations to sustain operations. Bhattarai notes that although they strive to provide essential items such as rice, lentils, canned goods, fresh produce, cooking oil, and milk, meeting all needs remains difficult without additional support. Each grocery bag distributed holds an estimated retail value of $25-$30, underscoring the substantial impact of their efforts.

Aurora's VEC plays a pivotal role in supporting refugee, immigrant, and low-income families within the community. Bhim Bhattarai, a former client turned staff member, emphasizes the importance of these services from personal experience. Having resettled in Aurora after fleeing Bhutan, he now dedicates his time to giving back to the community that once supported him. Although donations from key partners have decreased, Bhattarai remains optimistic about the future. He encourages individuals to contribute through volunteering, donating food, or simply raising awareness about VEC's mission. Through collective action, there is hope for sustaining and expanding these vital services.
