In a recent inspection round conducted by health inspectors in Lubbock, Texas, over 80 food establishments were evaluated for cleanliness and adherence to safety standards. Among these locations, two establishments stood out—though not positively. Popeyes at 2505 82nd faced significant scrutiny with a staggering 24 violations noted. Conversely, Chick-Fil-A at 312 University emerged as the sole top performer in this week's inspections.

During the routine inspection, Popeyes was flagged for multiple infractions that could pose serious risks to public health. One of the most alarming issues was the undercooked raw chicken, which failed to reach the required internal temperature of 165 degrees Fahrenheit. Instead, it only reached 155 degrees, leaving harmful bacteria potentially intact. Additionally, rice and mashed potatoes did not meet the minimum safe temperature of 135 degrees. Coleslaw was also stored above the recommended 41-degree threshold, creating an environment conducive to bacterial growth.

Beyond temperature concerns, the establishment lacked essential tools for maintaining proper hygiene. For instance, there was no thermometer present in the reach-in cooler, making it impossible to monitor food temperatures effectively. Furthermore, the sanitizer solution used in the three-compartment sink was too weak, attributed to a broken dispenser. Compounding these problems, a toxic level of sanitizer was found in one area, while another bucket containing sanitizer was improperly placed on a prep table, increasing contamination risks.

Structural and procedural issues further compounded the situation. The back door remained propped open, providing easy access for pests. Inside, both the walk-in cooler and freezer exhibited heavy accumulations of ice and debris, indicating neglect. Single-use items, such as cups, were reused improperly, including scooping bulk foods or frozen shrimp. Moreover, unlabeled containers storing unidentified powders raised questions about inventory management practices. Even the facility's infrastructure showed signs of disrepair, with soiled surfaces, dusty vents, and improperly installed ceiling tiles.

On a more optimistic note, many of the violations were rectified during the inspector’s visit. Despite these efforts, the sheer number and severity of the infractions pointed to a lack of adequate food safety knowledge among management. In contrast, Chick-Fil-A at 312 University demonstrated exemplary compliance, standing alone as the week's top performer. This distinction underscores the importance of consistent adherence to health and safety protocols in food service operations.
